Ingredients:
Rectangular tin
(12 inches x 14 inches).
Glaze with oil before lining with grease proof paper.

Optima flour160 g
S.P.10 g
Water50 g
Corn oil40 g
Cocoa powder20 g
Chocolate filling:
Thickened cream whipped cream) 170 g
Chopped chocolate250 g
Grand Marnier /
juice of orange
1 tsp

Method:
1. Mix corn oil and cocoa powder together.
2. Beat eggs, optima flour and SP till well mixed.
Add in water and continue beating till light and fluffy.
Pour in (1) and mix well.
Pour into baking tin and bake for 8-10 mins at 200°C. Leave it to cool.
3. When cake is cool, spread chocolate filling over it.
Arrange sliced bananas on top and roll it up.
Cut and arrange the cake to resemble a Christmas log.
Spread whipped cream and chocolate filling over it.
Decorate with handmade, edible Christmas ornaments.
 
Method for filling:
1. Boil thickened cream before adding chopped chocolate.
Mix well. Add in Grand Marnier and leave to cool.
2. Beat 150 g whipped cream. Cut banana into thin lengths.


Cake - Christmas Chocolate-Banana Log


Cake - Basic Bread
 
Ingredients:
Bread flour1000 g
Margarine60 g
Yeast25 g
Cold water460 g
Sugar180 g
Milk powder30 g
Egg2
Salt1 tsp
 
Method:
1. Mix egg and yeast together.
Blend in remaining ingredients to form a dough (about 8 mins).
Cover with a damp cloth and leave aside to prove for 20 mins.
2. Divide the dough into small portions.
Roll out and put in different fillings before forming into shapes.
Place on a baking tray and brush with beaten egg.
Leave aside to prove for one hour.
Bake for 12 mins at 200°C.
Remove from the oven. Brush surface with melted butter and serve.
