Ingredients:
Butter 250 g
Sugar100 g
Flour450 g
Egg1
Milk powder30 g
Filling:
Pineapple (about 2500g) 3
Sugar300 g
Cinnamon sticka little

Cooking Filling:
1. Mash pineapples and cook in saucepan till dry.
Add sugar and cinnamon stick.
Keep stirring till mixture becomes dry.
 
Method:
1. Sift flour and milk powder together.
2. Beat butter, sugar and egg in mixer well. Fold in flour.
Mix well to form a dough.
3. Roll out dough. Use a cutter to cut. Place on baking tray.
Brush with beaten egg. Top with pineapple filling.
Make crosses with dough to place on top of tarts.
Brush again with beaten egg. Bake for 15 mins at 180°C

Festive Snacks - Pineapple Tarts


Festive Snacks - Kueh Lapis
 
Ingredients:
Egg yolk 15
Egg white5
Butter300 g
Icing sugar120 g
Self-raising flour110 g
Sugar100 g
Mixed spices1 tsp
Brandy1 tbsp
Items:
Square Cake Tin
(greased, lined with paper)
1 (18cm x 18cm)

Method:
1. Sift self-raising flour.
2. Cream icing sugar with butter till light and fluffy. Reserve for use.
3. Beat sugar with egg white till stiff.
Add one yolk at a time and beat till fluffy.
4. Pour creamed butter into (3).
Fold in self-raising flour to mix well.
Add mixed spices and brandy. Mix well.
5. Pour 1/2 cup of mixture into a square tin. Spread evenly.
The temperature of upper and lower heating elements in the oven to be kept at 200°C.
Bake till golden brown. Remove.
Pour another 1/2 cup of mixture over it.
Bake again till golden brown. Remove.
6. Switch off the lower heating element.
Bake with moderate heat from above.
Repeat the process.
7. Switch on both heating elements on for the last layer.
Bake at 180°C for 12 mins. Remove to cool.
Cut into different shapes and decorate as desired.
